I do not believe that I have ever had chicken dredged in cornmeal. Seafood, for sure. I'll have to think about this one.

I do not believe that I have ever had chicken dredged in cornmeal.

I've made fried chicken using very finely ground cornmeal and the crust definitely takes on a different appearance and texture.  I can't say for sure but based on personal experience I suspect Watson's in Champaign, IL may use cornmeal...I encourage you to go check it out!

2-1 flour over cornmeal gives the crust of the chicken a really satisfying crunch. If you prefer a soggier chicken then
do not use it.

Michael is not a fan of fried chicken so I don't go through the bother of making it just for me.  But when I did make it, I dipped the chicken in buttermilk then a mixture of cornmeal and flour, with seasonings, about 50/50 blend.  That's how my grandmother used to make it.

A buddy of mine was visiting from out of state last week and I knocked a batch out with sweet corn and green beans on the side. I hadn't taken the trouble in a long time. It was worth the effort.
