    Doesn't say how to handle the onion, carrot or green pepper.  Toss them in whole?  Chopped, diced, minced?  Any insight?

    Given most recipes from NOLA I'd go with chopped or diced.

    Is there a signature rice that qualifies as Louisiana Rice?

    It varies by household but as long as you are sourcing from Rayne or Crowley you'll be alright. I met an old Cajun at a pig roast once and he was refusing to eat because the host was only serving long grain rice. That was his hill. Crowley has a big rice festival each October if you're booking Fall travel.

    You might like Falcon Rice. It comes out of Crowley and is quite good. I get mine, (as well as my Camellia Beans) through CajunGrocer.com , it's all priced to move! Even a lot of the seasoning meats are really good.

    Falcon is a major player in the LA rice game. I just look for medium grain and the town of origin when I buy. Louisiana used to be the dominant rice producer in US but those days are sadly gone.
