We don't see Frito pie much around here, but corn chips are often used for "walking tacos".

And you can get it at Tolbert's Restaurant in Grapevine, TX, near DFW International.  
 
Tolbert's, favorably reviewed here on RoadFood, is operated by the children of Frank X. Tolbert, the 'inventor' of "Texas Red".

around here, the terms "frito pie" and "walking taco" are used interchangeably, and is the same item
 
Some local places use Cincinnati-style chili for this dish, but most in my experience do not.

If y'all are ever in Austin run by Micklethwait Barbecue, he makes the best restaurant version in the state.
