I wasn't planning on a hinge. Could always add it later.
Now looking for affordable new or newish freezer and fridge. We bought used stuff that the county doesn't like. I think the fridge was for medical use. Oops. Wasted money.

A medical fridge has way higher standards than even an NSF rated one.
 
Guess they are worried somebody might have dropped a vile of ebola in there.
That was my 1st thought when I saw one for sale here.
But we actually do have Canada's only level 4 research and containment lab right in the center of city. ( no joke )
 
Yeah, seriously, we house and research ALL the nasty viruses, and the geniuses put it smack dab in the center of the city, and we are the center of the country. 
 
Anyhoo, at least you can resell it.
Do they want NSF stuff, or just household stuff?

The forum hosts the pics after you post a certain # of posts.
WAY easier to use the site I mentioned.
 
Where I am, we deal with Health Dept, Fire Marshall, Fire Commissioner Electrical, Fire Commissioner Gas.
 
ALL separate departments, NONE of them talk.
Often they contradict each other.
NONE of them know or are not allowed to say anything about something that falls under the others jurisdiction.
 
Hopefully it is easier where you are.
 
Most AHJ's will reference the NFPA96 for code.
Often it's all in how they interpret the code.
And how strictly they decide to adhere to it.

I totally get the cross communications breakdowns. Down here we have 26 different state, county, and city agencies that we deal with each year. One says you have to have you fire extinguisher on the truck, another say it needs to be off the truck. One says your system needs to certified by a State certified installer. Then I point out that there isn't a certification or license that the state issues. Just a industry trade certificate. And he just repeats that they need to be state certified. I'm disheartened to hear that its not much better on your side of the border. We were looking into the buying a trailer up in Vancouver, and taking over to the Calgary Stampede next year. We may have to push that back a couple years until I can research you're regulations better.

Here, all of the different departments are run by the government in one way or another.
So they are all union people on top of it all.
And no one wants or can be responsible for, anything past their cubicle walls.
So I understand that it is not necessarily their fault.
But it still sucks.
 
More often than not, the only thing they know how to do is quote the small piece of CODE that pertains to them.
 
I have heard of many people here buying trucks/trailers down in the USA and bringing them up here.
Most are better equipped than our stuff here.
Then they have to gut the entire thing.
 
Vancouver seems to have much "different" ( lower ) standards/rules than the rest of us.
From pics and videos I have seen.
 
Wide open serving windows and doors with no screens!  Our HD would freak!
 
I think Calgary is a fair bit stricter.
 
I would be more inclined to look at something locally made that has passed their inspections already.
Or maybe they have a rental?
I know they do that in Toronto.
 
I have also heard that to do an event in another province, you can get some kind of temporary permit for said event.  You might want to check with the organizers for that.
 
I would think the entrance fee would be at least $5000.00.
 
Any of our BIG events here are in that price range.
Plus there is usually a waiting list.

We were invited a few years back before our BBQ Trailer was finished, I think the Stampede was $12,000 plus commissions if I'm remembering right. But after talking to a couple of other vendors that had issues taking their rigs over the boarder over the years. I was looking to bypass that by buying one in BC that was code compliant. So back to the drawing board. ***New goal Calgary Stampede 2020***.

Plus commish...
 
So that, plus a truck or trailer  ...  what ??  60 70K??
Plus over head costs, supplies, staffing ....  everyone staying there for 2 weeks, travel expenses to and from..
 
I'm thinkin you would need to do 10k a day gross to break even.
 
Then knock 35% off that for exchange rate.
 
Only seems like a tiny bit of risk.

Our electric should be done today. I still can to get a speed control for the fan. But that's about it.
Then call to get the ansul system installed.

I haven't noticed any trailers around here painting their propane pipes any particular color. I would think they should be yellow. I think I'm going that route.

Looking really good!
And I think you said it was 6x12. 
So yeah, a little tight.
Looks easy enough to free up space though.
 
I always work left to right.
For ME, I would have put the sink along the back wall.
And put the 2 prep tables where the sink is now.
That would free up all the area across from the window and straight to the cooking space.
Then it could easily handle a 2 - 3 person production line.
 
Even allow for Another prep table if you want, for more work space.
Maybe just a small serving counter under the window.
There would still be lots of room for another deep fryer of flat top.
 
But that's just ME spoutin off.
Everyone works their own way.

Thanks. The sandwich station fridge is used. I would have bought a regular fridge if I found one. I hoping our main business is frying empanadas. But, the prep area will be there if we need it.
