Avoiding spills from shortening/oil in deep fryers
I've been thinking about mounting some kind of tight lid or something on top of my deep fryers before launching my food truck. How do you guys keep your shortening in the deep fryers? Do you let it run out from the deep fryer and into an another enclosed container? What about at night when the shortening is really hot?
I've been thinking of maybe even dumping the shortening half wa so that its really shallow and then driving off with the truck for storage.
