1 slab ribs...
Rub with brown sugar, salt, pepper mixture.
Let sit 30 minutes.
Cook at 240 degrees indirect heat for 3 hours.
Take out, let sit 20 minutes, rub again!
Throw on the BBQ grill (direct heat) and cook for 10 minutes.
Coat with a BBQ sauce on each side, cook 3 minutes on each side.
Take off. Put in catering pan, cover with foil, let steam 15 minutes.
