Bacon-Wrapped Treats
Tonight we decided to use up some thick-sliced Bacon and other items to make a bunch of "ToothPick Foods". We wrapped some whole Water Chestnuts, some Mushrooms, and I cut one of our Porterhouse steaks into big-bitesized chunks. We kept the center of the Filet whole so Jan could enjoy a 'real' steak, in case the bite-sized stuff didn't do too well. Here is the platter ready to go into a HOT Oven. When it came out the bacon was ready, and so were we. The steak was straight 'Medium', something we considered a bit overdone, but it allowed the Bacon to finish before we removed it from the overn. Here are the pieces after about 15 minutes in a hot over. I like the Water Chestnuts best, but the Mushrooms are not far behind (shown here). The steak would be better if we caught it at the Medium Rare stage. It made a great finger food dinner for the two of us.!!

Al,
You can pre-cook the bacon 1/3 to 1/2 way done and then, wrap your beef. Bacon and this trick is good with scallops and shrimp.

Next time try the pre-cooked bacon on the steak. Then it shouldn't take as long to get the bacon crispy, so the meat should be closer to med-rare. I'm going to have to try those myself. I just did some of the waterchestnuts over the holidays.

My wife takes water chestnuts and wraps about 1/3 of a strip of bacon around each one, then pops it in a bath of half barbecue sauce and half honey. Major yum.

stuff a pitted date with a matchstick of chorizo sausage, wrap it in bacon, and broil it until bacon is crisp - amazing! (the original recipe calls for deep-frying too, but i could never bring myself to do it!)

We have managed to accumulate a bunch of the brown/drip plates and cups and oven-ware. Most of it from yardsales etc. The heavier pieces are stamped 'oven proof' on the bottom, the pieces like the two in the photo are not.

A friend of mine once marinated chunks of swordfish in some Italian dressing, then wrapped the chunks w/ bacon and broiled them. Very tasty!
John (the bacon at the breakfast buffet at the Hooters Hotel in Vegas is still a fond memory of my trip 15 months ago)
