Beets & Egg?

I was looking at the side dish menu for The Farmer's Daughter in Urbana, OH and noticed that one of the items is "Beets & Egg", which is something I've never heard of.  Does anyone know if this is some sort of regional/cultural specialty?

    Seems like this might be what your looking for.  We've got a couple of Roadfood locals not too far from there who might be able to confirm.

    My mother used to make them all the time in the summer.  My father loved them!

    My dad used to make them when I was still young.  I didn't care for the beets, the eggs were what I was always after.

    My wife just made a batch of these- which we always called 'Red Beet Eggs' for our church picnic tommorow afternoon
    She cheats a little- buying pickled red beet juice from an Amish Farmstand we frequent
