    I like sour cream and apple sauce, but I also enjoy just a little suger on them.

    I've only had them frozen. Local grocery store carries them put out by Golden not bad but I might try to make my own any hints? Chow Jim

    Here you go:

    Potato Latkes

    1 pound potatoes, peeled

    1 large onion (1/2 pound) sliced in half crosswise

    2 large eggs, beaten

    1 teaspoon salt

    1/4 teaspoon black pepper

    1/2 cup matzo meal

    1/4 cup vegetable oil

    Grate the potatoes on the medium or fine side of a grater and place them in a fine wire-mesh strainer over a bowl. Grate the opnion on the medium side of a grater and transfer to a separate strainer. Let both stand for ten minutes to drain the liquids. Press down gently to extract as much moisture as possible.

    Transfer the potatoes to a bowl and add the grated onion, beaten eggs, salt and pepper and mix well. Fold in the matzo meal. Then let stand for ten minutes while heating oil in a medium skillet over medium heat.

    Scoop up one heaping tablespoon of the mixture and place in the hot oil. Press down gently with the back of the spoon to flatten. Repeat to form four to five latkes, depending on the size of the pan, leaving space between them to make it easier to turn them.

    Cook until the bottom side is golden, then turn over with a spatula and cook the other side. Transfer the cooked latkes to paper towels to drain. Repeat till all the mixture has been used.

    Makes 12 to 14 latkes, four to six servings (Unless they're for me, and then it makes one serving)

    Serve with applesauce and sour cream.

    Note: I put the grated potatoes and onions in separate dish towels and squeeze out the liquid. It takes less time that using strainers. Also, I top mine with sour cream and a grind of pepper, serving the applesauce on the side. I place the latkes on a paper towel-lined baking sheet in a 250-degree oven to drain and keep warm until all the latkes are done.

    Sounds great Mike thanks I'll have to pick up Matzo though, not a staple on my shelf at this time. Any other uses for Matzo meal? I know about the soup wich I'll also try. Thanks Chow Jim

    Well, you can use the matzoh meal to make matzoh balls. And of course for making potato Kugel.

    Here's one recipe for Potato Kugel:

    5 large potatoes, grated
    1 large onion, grated
    3 eggs
    1/3 cup matzo meal
    1/2 cup oil
    1 teaspoon salt
    1/4 teaspoon pepper
    1 tablespoon baking powder (optional if you want your kugel to rise a little)

    Preheat oven to 400 degrees. Grate potatoes and onion, separately, on a fine grater, drain off most of the water. Add the eggs and other ingredients. Mix well. Pour into a well-greased 8 by 8-inch Pyrex pan and bake for about an hour, or until a brown crust has formed on top and the bottom is brown as well.

    I know I'll be accused of blasphemy but, I like mine with ketchup. Let's examine the important elements of a latke-potatoes, onion and hot oil. I mean what are these things but flat french fries enhanced with grated onion? Why not ketchup?

    If I can't have ketchup, I'd go with the sour cream and caviar option. The whole apple sauce thing never made any sense to me.

    Funny thing,
    While both my sister and I were raised in the same house, she likes apple sauce on hers. I just like plain salt; however, that ketchup thing has me intrigued. I certainly enjoy ketchup.

    Ever since some bigtime food critic said it was certainly OK to have ketchup with your very expensive, top steakhouse steak, I hide the bottle no more. Au jus for the guests. Heinz for me.

    I have always had just applesauce on my latkes. Don't know why I never tried sour cream as that's my favorite for baked potatoes, but considering the amount of saturated fat already in the latkes from frying, I prefer just the applesauce. And I'll second phatphil on the brisket. My Mom always cooks a brisket to go with latkes for Chanukah and makes her own applesauce too.

    I know this is lazy, but we have come to like the latkes from Trader Joe's. I prefer them with just a little more onion but like them better than any version we have tried to make.

    Have loved them for years and just the other day i made them at home for the first time--my daughters friend had brought us a menorah for the holidays---we celebrate EVERYONES holidays!!---that they had bought in Brooklyn--it came with a book that included the story behind it all-the prayers AND---recipes!!! So of course.......well they came out great---Ilaana said---"These are as good as my grandmothers!! YOU sure your not Jewish?"---and they are fast and easy with a good shredder---so they are becoming a frequent guest in our kitchen---but not for long visits!! they dont hang around to long! Oh---and i love them with sour cream---the cavier would be nice!

    I love em with both sour cream and applesauce. But best of all is some good quality cream cheese and a little spoonful of some kind of berry preserve on top of that. Mmm mmm good !

    I like mine with sour cream, but I always have applesauce as a side dish. As to caviar, well, I love good caviar, but I prefer it straight from the spoon, not on my latkes.

    I'm not a great cook. But I am OK, and I think I'm getting better. However, that said, I've never gotten latkes right, never even came close...let alone made them as good as Mom did.

    I find them daunting, almost mystical, perhaps because Mom's were so great. I know, I know...everyone's Mom made them best. But My Mom really did. They practically rivaled her expertise in soups. Plus, she whipped them up at a moment's notice if you wanted them. Had the ingredients, had the bowls, whatever. Just did it. Amazing.

    However, I have a theory that works for me. It requires that I never give up. Because, once I finally do master a dish, it's mine. After that, I can make mistakes along the way, forget an ingredient , mess up the timing, etc., and it still turns out good.

    I'm going to try latkes again...within the next month. I'm sneaking up on it, planning my attack, buying the ingredients one by one. Can't let the dish know of my plans. Today, I bought the matzo meal. I will make good latkes.

    Rest assured Screenbear, not everyone's mother made the best. My mother's were so heavy we called them depth-charges. Taking a bite of one of her latkes was like playing Russian roulette with all six chambers loaded. Of course, taking a bite of anything she cooked was the same as that version of Russian roulette. That's why we called her Lucretia Borgia.
