The eggs were mixed in a stainless steel milkshake machine for several minutes. Then the frothy mixture was quickly cooked and flipped in a very hot, well oiled pan. The next step was "pouring" the partially cooked omelette on the grill where it magically puffed up. The cook placed some American cheese on one half, then folded it over. It was cooked on the grill for quite some time, in fact, my husband was sure that it was going to be dry and overcooked. But no...it was great! I also watched the cook make a bacon omlette the same way, although a veggie version was not made with the beat up egg mixture, so was not as fluffy.
