After a brief delay, due to some bureaucratic and red tape issues with the local municipality, remodeling has resumed at full speed. Once that process is complete, we can get back to fine tuning the pizza making process to match Burt's talents and high standards.
 
We're hoping to reopen sometime soon after January 1st.

I'll have a word with that server and try to improve things before your next visit.

You might also suggest to the owners that in order to get more complete feedback from the soft opening, inviting a few diners from outside the Chicago area - maybe even the state - would be a good idea.  Just sayin'.

Yup.  We're getting there.  New floor laid in the front, kitchen coming together, etc.  We'll be kicking into high gear after January 1st, pushing for a soft opening or three by the end of the month.

I am both puzzled and disheartened by the lack of notice from our black leather apron clad inside man!  


First of all, it's brown leatherette.  Secondly, the events leading up to this opening night took me by surprise, just as much as you.  Yes, I knew it was coming, but not until just a few days before the announcement was made.  We had discussed doing a private Roadfood party as part of a soft opening process, and I'm still hoping something like that can happen somewhere down the line.
 
All of that aside, I still wouldn't have wanted my friends to be there tonight.  It was an opportunity to make mistakes (from which we all learned a great deal) in a chaotic situation.  While it might've been fun to say you were at the opening night, it'll be far better for all interested parties to wait a bit while we iron out the wrinkles (notice I didn't say "bugs") and find our rhythm and pace.
 
The important thing to know, for all the night's imperfections, everyone was ecstatic about the food.  So, big plus in that direction from day one.

Pie Diva and I dined at the recently reopened Burt's Place tonight. As you can see above, the restaurant is much brighter, they may have opened the valve to let some of the dingy drain out. I should have photographed the new restroomS, yes plural. Sparkly white, with no Spartan Course to navigate to enter. I thought briefly of dining in one of them.
 
Enough of the superficial, you want to know about the pizza.

We were not exactly regulars when Burt was still around. I estimate we dined there less than a half-dozen times. But we both thought the pizza was very close to the pies Burt made. I thought they nailed the crust, especially the crispy bottom and charred, cheesy edges. The sausage is still the best pizza sausage around.

We definitely enjoyed our meal and will return in the future.
 
One final note on timing your arrival. They have switched away from Burt's "be there 15 minutes early" policy. Our pie arrived at our table about 15 minutes after our 5:30 reservation. It sounded like it was a conscious decision by the new owners. Possibly to accommodate their new customers who were unaware of the old paradigm. I can imagine all kinds of mayhem caused by some diners showing up early, and others at the second their pie comes out of the oven.
