if the  restaurant and establishment is sold as is I wonder if  the deal includes Buddy
 
I've been thinking about my trips over the next few years and  none of them have me routed through Chicago.

Given what I have read of the pizzas served here - I never had the privilege of eating one of Burt's pizzas - if the new owners can produce a product even 75% as good as what Burt put out, this will be a big win for all

Good news/bad news:
 
The good news is, early experiments in recreating Burt's signature foccaccia-like crust have been more successful, and were achieved more quickly than expected.  As far as the food goes, I think these new guys will easily surpass the 75% bench mark mentioned above.  They're earnest, sincere, and have a genuine interest in making a long term run at the place.
 
The bad news is, strictly in my opinion, based on the amount of work that needs to be done to update the kitchen for current requirements, the mid July/early August target date for reopening is greatly optimistic.  The new guys want to do things right and that's just gonna take time.  I hope I'm wrong.  The sooner they're back in business, the sooner I get back a source of income that's been missing for a year.
 
TJ, If eating at Burt's is a priority for you, I'd move that roadtrip back to September or October.  Again, just a rough guess and personal opinion based on other rehab jobs I've witnessed in the past.

Agreed.As a been there done that repeated customer, that would be my choice.
 
Although  If I'm with a first time visitor to Chicago for a first time experience I'd still do either Lou Malnati's or Giordano's.

Who'da thunk it; Michael Hoffman fighting for a chance to eat a Chicago Style Pizza?!?  I know, it's only because it's a Burt's Pizza.  But if someone had told you five years ago MH would try nudging his way into a judging of any Chicago Pizza, you'd be looking for reports of arctic activity in the Underworld, a cessation of all bear bowel activity in the woods, and the announcement of The Pope's bar mitzvah.
 
Don't worry, Michael, I'll let you know when the new guys get it perfected.  I'll even save a special table of honor for all Gahanna, OH residents who make the trip west.

Hey, I'd eaten that SORT of thing before in Chicago. But it had never been like at Burt's. Burt's pizza blew me away. It is a different breed, maybe species. But that's why I can say it was right up there with Frank Pepe's, or Sally's.
 
Let me put it this way. Burt's was the Pepe's of Chicago pizza.

Buddy, where in Paris did the new owners find the Blodgett oven?  Just curious...I ate at a pizza place there last month.

I honestly don't know which specific restaurant is selling the oven.  I offered yesterday to make the trip downstate with them to help load it on a truck, but haven't heard back.
 
Things continue to progress, but it's a long hard row to hoe as they bring an 18th century building up to 21st century standards.  I promise, as soon as there's anything noteworthy to report, I'll let the Roadfood population know about it.
