Butterscotch pie/sweetened condensed milk

O'Charley's make a butterscotch pie using sweetened condensed milk that my family truly enjoys. I have no idea how they do it but I have heard that they take a can of sweetened condensed milk and but it in boiling water for a while. That seems a bit dangerous to me but I have also heard of other folks that do it.

Does anyone know the procedure?

    I have made the butterscotch to use over ice cream. It key is to simmer gently for at least an hour. Be sure the whole can stays completely submerged all the time. Let it completely cool in the water. I don't know why it doesn't explode, but it never has.
