Chef Rodney Scott's Collard Greens

I love collards, and I have rarely run across them in the many places they where they are made when they weren't good. Well, Rodney Scott, the reigning king of whole hog BBQ, has shared his recipe for collards with the world! Man, I'd love to have a big bowl of these at his restaurant, with his pulled pork in them.

    My recipe is very  similar.  I grow collards in the garden and I harvest them while they are still tender.  I remove stems and use almost exactly as Scott's except I add jalapeno.  That is the only difference.
