Thought people might be interested in where else we are eating on Saturday.  Here are a few places we have never been to before that we would like to visit.  Obviously, we could never hit them all:
 
Horse and Plow - Kohler
Bud Willman's Lunch - Manitowoc
Al's Hamburgers - Green Bay
Joe Rouer's Bar - Luxemburg
Nicolet Restaurant - Green Bay (breakfast on Sunday)
Kurtz's Pub - Two Rivers
 
And will be difficult to be in this area and not stop at old favorites including:
 
Gosse's - Sheboygan
Charcoal Inn - Sheboygan
Beernsten's Candy - Manitowoc
Chili John's - Green Bay
Mihm's - Menasha
Basil's II - Denmark
 
If you have opinions on these places or have other suggestions, please feel free...

That looks like a Fine* list, although I can't imagine you getting to all of those places with the distances involved.
 
I haven't been to many on your list of new places, but would bypass Kurtz's if you're short on time. I used to go there a lot when I worked up that way out of desperation and can't think of anything I'd go back for (except the beer), they never even had a fryer or a broaster. Not Roadfood worthy in my opinion and definitely not "Legendary." That is a complete joke.
 
If you get a hankering for pie while near Manitowoc consider the Covered Wagon. It really is a dive, but they offer several homemade pies and tortes at all times. The daily specials and the fishfry are also worth trying there.

BTW - Here's a link to my Top 10 for Manitowoc & Two Rivers. The list is over 10 years old and is very dated, my first two recommendations are now long closed.

I miss hard rolls almost more than square-cut thin crust pizza since moving away from Wisconsin.  I've even tried to make them at home.    My northwestern Wisconsin tiny town did not sell ham (or anything else) on Sundays, but a frequent Sunday night supper was "frizzled" ham slices left over from the roast ham dinner, on hard rolls with plenty of butter.  My mom called it frizzled - she just heated the slices in her cast iron skillet, but i loved those sandwiches more than the original dinner.

I should also offer to see if anyone wanted to join us for lunch at the Horse and Plow inside the famous American Club in Kohler.  This is their casual pub.  If anyone is interested, we will be there when they open at 11:00AM.

The Shorewood location works for us.  They do open at 7:00AM, but since we are getting in late, how about we keep it at 8:00AM?

I got a head start on you and stopped at Iron Grate when they opened at 8am. Of course that is a Canfora Bakery hard roll buried under that luscious BBQ ham.

We had Badger boiled ham on hard rolls last Sunday. Although the traditional choice, it was nothing like that.

Badger comes in boiled, baked and smoke baked varieties and is crème de la crème in each category. I live nearby and 30 years of asking will not have them budge when I ask to buy it from the factory. Canfora is easily my favorite local bakery but that Iron Grate BBQ ham deserved a great buttermilk biscuit imho. Attn: Cliff, Canfora has wonderful cookies and pastries too.

Somehow I neglected to try the potato pancakes...I'm very disappointed in myself.
