Deep Fryer - mixing product
I am working on a 12' mobile food trailer. I want to offer regular fries AND sweet potato fries, however - the ansul hood is only 5' long. 3' of that is taken up by the LP griddle, The smallest counter-top deep fryer I can find (commercial grade) is 14-3/4" wide. This leaves approx 10" left, not enough for a 2nd fryer.
I am presuming that I should not mix the 2 types of fries in the same fryer? Would the flavor from the sweet potato fries carry over when I drop regular fries in?
