Deep Fryer - mixing product

I am working on a 12' mobile food trailer. I want to offer regular fries AND sweet potato fries, however - the ansul hood is only 5' long. 3' of that is taken up by the LP griddle, The smallest counter-top deep fryer I can find (commercial grade) is 14-3/4" wide. This leaves approx 10" left, not enough for a 2nd fryer.
 
I am presuming that I should not mix the 2 types of fries in the same fryer? Would the flavor from the sweet potato fries carry over when I drop regular fries in?

    I wouldn't worry if your only using potatoes. When people talk about using two different fryers is because they are frying fish, chicken and things like that. You should be fine.....Good luck......pnwchef

    I agree with pnwchef, don't expect there would be any noticeable difference.

    i've worked in a kitchen that only had one fryer for most of the fried food....  and we fried almost everything in it.. keep in mind that most fish and poultry was battered. but yea almost no noticable difference.. but keep in mind if your oil is over due for a change, youll taste everything that's hit the oil ( with a vengeance ) but to answer the question.. it should be fine.
