Denver To Spokane Roadtrip-Where to eat??

We are taking a roadtrip next week from Boulder, Colorado to Spokane, WA. The tentative route will take us north into Wyoming, then west through Montana on Interstate 90. If anyone has suggestions of where we should stop on our drive to Spokane, we are willing to take alternate routes? We are looking for any good restaurant/diner/bakery; "Mom and Pop" places, no chain restaurants. Thanks.

    You might want to move this post to the Where Should I Eat forum. That's a really popular forum and people are very generous with their recommendations. Just a suggestion. It sounds like a good trip. What is your route from Boulder to Spokane?

    We will drive on I-25 north to Wyoming.In Buffalo,Wyoming I-25 joins I-90 ,which goes west through Montana and Idaho ,all the way to Spokane,Washington.

    You could stop at Karen's Country Kitchen at 700 Main Street, Louisville, CO. A very enjoyable place with a good breakfast menu.
