Re:Electric stove usage.
Sorry, but it doesn't matter what anyone on RF knows or thinks they know you need to check with which ever department is in charge of that sort of thing. Like the local fire department inspector, health department or whom ever.
If you just get some advice from here or a friend that used to work in a kitchen it may be right, wrong or half right, ether way your still going to have to deal with the local authority sooner or later.
We currently have some new build/start up members that are going through rebuilds because they got bad advice, don't let that happen to you.
You may be able to find the local rules on line but I'd caution you some times they are very hard to understand and are always open to the inspectors interpretation. So what you read and understand may not be the way they interpret the same city, county, or state code.
I know that sucks but it's the way the food business works.
