Favorite Eggplant Recipe?

I scored a big fat eggplant at the market yesterday. What's your favorite eggplant recipe? Does not have to be vegetarian.

OK!  Cut the eggplant in half.  Using a paring knife and a spoon remove the meat of the eggplant in medium chunks.  Be very careful not to pierce the skin.  Put the two eggplant skins into a baking dish, cut side down.  Add a little water and olive oil.  Cover with foil and bake at 450 for about 15 mins.  Remove the foil and turn the skins over.
In olive oil sauté whatever meat you want, for this I used bulk hot sausage.  Remove it from the pan when cooked.  Add more oil and sauté the eggplant with some chopped onion and chopped garlic.  Add some canned Roma tomatoes, chopped.  Add salt and pepper and fresh basil and parsley.  Put this into the skins and top with provolone slices.  Bake at 450 until the cheese is melted and browned.  Enjoy with a tossed salad and a glass of wine!!

Thank you! I'll have to give that a try next time I have one. I usually stuff mine with shrimp and some other stuff.

I once made caponata which I love.  When I made it the one and only time I saw how much oil the eggplant sucked up I never made it again.
 
I even like canned Progresso Caponata.

All of the above look beautiful and appetizing.  But my favorite eggplant recipe comes from the other side of the Mediterranean; Baba Ganouj!  I just love the smoky sweet/bitter overtones of the grilled eggplant combined with plenty of Garlic, Lemon, and Tahini.  Scoop it up on Pita Bread with some halved cherry tomatoes or a scattering of Middle Eastern Pickles and you have a very satisfying dish.

Buddy, I'm with you on Baba Ganouj.  I could eat it as a main dish it's so good.
 
It's also easy to make at home in a food processor.
 
All Japanese Eggplant dishes are good but usually made with the long, thin Japanese Eggplants.

I always liked Moussaka, this looks like a good way to make it 'for one' instead of a large casserole dish;   and have the other half ready for later.     Thanks

My favorite dish is actually easy to make. It is Chinese Eggplant with Minced Pork. Basically eggplant with ground p[ork and a spicy sauce, it is delicious!

My wife says " Just fry it up and we could eat it like this. I say lets go a bit more and make Eggplant Parmigiana.

I made lleechef's eggplant recipe tonight of my rendition of it.  I use ground chuck & sausage.   I have half for tomorrow night.  I'll be making this again.    Thanks lleechef!

I absolutely love eggplant.  Think of Bubba's explanation about shrimp in the movie Forrest Gump; but with eggplant.  Yep. 
One of my favorite uses is to put a whole bunch of it in when I make chili.  A secret ingredient that thickens and provides incredible flavor but with comparatively few calories.

Two Eggplant dishes I love:
Spicy Szechuan Eggplant with pork at my favorite Chinese restaurant.
@EdSails- Great minds think alike.
 
And of course, Eggplant Parmigiana. As had in a good old family style Italian "red sauce" restaurant.
