Crockpot leg of lamb, in the crockpot right now...
1 boneless butterflied leg of lamb, about 3lbs, rinsed, strings removed, fat cut off as much as possible.
Stud lamb with 1 head of garlic.
Blenderize: 1 onion, 1/2 cup water, salt, pepper, juice of 1 lemon, 1 tbs dried rosemary, 1 tsp bouqet garni, 1 tbs dried mint, 1/2 cup white wine.
Bottom of crockpot: layer 4 carrots, 6 russet potatoes peeled and sliced in half.
Top with garlic studded lamb.
Pour over blenderized ingredients.
Pour a can of drained small white beans around.
Cover, turn to high, cook for about 7 hours till potatoes soft and lamb fully cooked.
