I wonder if the popularity of barbecue is relatively new. I was there a couple times around the turn of the century and don't remember any rib shops.

I loved Amsterdam too.  I was there last century.   But I don't remember seeing any BBQ shop then.    McDonald's was just getting started at the time.

I'm no expert, but I saw no ribs when I was there over 20 years ago.

Dutch ribs have been around for ages. De Klos opened in the early 70, and they were not the first shop. In the last few years I've seen the rise of the Big Green Egg where restaurants are using them indoors to put out barbecue without smoking the patrons out the front door. The municipality has a lot of rules when it comes to producing smoke from your restaurant. De Klos par-smokes in a suburb, and trucks the ribs back into the city.

Now that's interesting. Raises the price,I'd guess.

I can't recall how much a rack costs but I believe it's roughly 20 euros, splittable between two eaters if  you're so inclined. They must own the building as they're just a few meters off Leidseplein which is completely touristic.
