Texas?  There are outstanding hamburgers everywhere..........if you avoid the chains.  Of course I have an older son who loves Red Robin.  Yikes

I went to Red Robin in Knoxville a few weeks ago.  They have got sorta pricey.  Several of their burgers are like $15.00.  I bought their cheaper one at $7.00.  Their fries are fake.  Crispy on the outside and like mash potatoes on the inside.

"Their fries are fake.  Crispy on the outside and like mash potatoes on the inside." This is what a good fry tastes like -- the reason you double fry them. First fry is to cook them through, the second to crisp up the outside. Their fries are among the best of the fast foods.

How much 'steaming' does the roll see in the minute it takes to be wrapped, bagged and brought to a table for eating? Not much. FOr those taking out, the choice is: do I want a warm, or cold, burger. Get over it.

And, Five Guys thoughtfully provides malt vinegar as a condiment complement to their wonderful fries.

I like to fill up one of their 'ketchup cups' with malt vinegar, then break a fry in half and dip it so that the soft interior absorbs the vinegar.  Than, a quick dip in ketchup and I have "fry Heaven".

Their Paris stores offer béarnaise on request - truly another level of fry Heaven.

BTW, assuming your post was sincere, Welcome to Roadfood!

Do the same thing with the cups. Love the malt vinegar. My son also taught us to put a lot of pepper in the ketchup cups. Sometimes I think I go there mostly for their fries. The best!!!

FWIW, vinegar on fries is SOP here in central Maine.
Do the fries tend to vary by location? The Augusta, ME store cooks a crispier fry(read better)than the Bangor location.

They get less crispy if they steam themselves in the brown bag they are served in. Solution: start eating those delicious things quickly!

When Five Guys began in 1986 with me as an ardent customer I noticed a very familiar thing about their fries, they were prepared the same way that Thrasher's had been doing in Ocean City, MD since 1929.

Fresh cut, rinsed, drip dried, par fried, then refried.  Same peanut oil for frying, same malt vinegar offered as a condiment, same over-generous serving size.  When they first opened the fries were a bit limp but over the years they increased the finishing fry time to produce a crisper product.

While they were slowly expanding - (only five stores in 15years) - former NFL MVP and retired Redskin Mark Mosely was operating a few Boardwalk Fries franchises at Potomac Mills and Ballston Common malls' food courts.  I don't know who approached whom, but Five Guys owner Jerry Murrell hired him as Director of Franchising and the rest is 'history'.

Murrell wisely chose not to "go public" and the company remains a privately-owned, closely held corporation whose focus is on consistency and quality control.  Yes, indeed; he did build that.

Several years ago when I mystery shopped 5 Guys for several months there was a special section on fries. I had to observe how many times they shook the basket (11 or 12 iirc) before dumping it out on the serving tray. We were also told not mark down their score if we thought the fries were soggy because they were "boardwalk style" and weren't supposed to be crispy. The last few times I've eaten there I noticed the fries were much crispier so I wonder if they changed the timing on the fryer.

It depends on what we mean by "crisp".

Back in 1986 and through most of the '90's their fries were light-colored and pliable.  That is, one could bend them in half without breaking - the same as fries at the beach or a carnival stand.

Starting in the early oughts' their fries became more browned and less pliable.  Today they are golden brown and will break cleanly in two.  Perfect!  They still have plenty of 'potato meat' and potato taste (unlike, say, McD's) while not being 'floppy' (or soggy).

To me, "crisp" entails "crunch".  Save for the small pieces, their fries are not crunchy but they definitely have become more golden brown and substantial over the years - most likely due to a longer finishing fry.  In any case, they will do "well done", a.k.a. crispy/crunchy on request.

EDIT:  BTW, over the years I note that Thrasher's/ Boardwalk fries have also become browner and more substantial.  To make $$$ you have to give the customer what they want.

The mystery shopper company that shopped Five Guys was marketforce.  There are dozens if not hundreds of Mystery shopping companies. One of the best sites to check out if you're interested is https://www.mysteryshopforum.com/

We have a several Five Guys in the San Antonio area. One is located right across from the Alamo Quarry market Place in Alamo Heights. The other and closest to me is in Live Oak in the Forum at Olympia Hills Shopping Center. It's pretty good and i have no complaints. Please be aware everything is ala cart. You have to order burgers, fries and drinks seperate. It's not like going to Whataburger  or McDonald's or Carl's junior and ordering a meal  consisting of a drink ,fries and burger all for one price.

You can get a "meal deal" at Five Guys, just order fries and a drink to go with your sandwich.

I have to laugh at 'meal deals' - you might save 20 cents, but typically you are paying an extra $2.50 for items with a COGS of pennies.  Believe me, the guy who dreamed up that scam is on the beach somewhere surrounded by young individuals of the opposite sex!

The cup costs more than the Coke!

Besides, all burgers at Five Guys are bespoke with 250,000 possible topping combinations available, so their menu is not conducive to offering a "#4" (or whatever).

You got to love the choices.Don't like burger places where you choose a set burger by number.

Well if it sits at the bagging for 5 minutes waiting for fries to get cooked, quite a bit!

It happened to me at both of the 5 Guys in my area & even with the wait, the fries were soggy. I haven't been back.

Guess I'm lucky..been to two other 5 Guys, and the same equal crispness. That's the way it should be.Maybe some franchise owners specify how it should be done. Perhaps your two area 5 Guys were owned by the same organization.

I live 5 guys. They serve fresh cut french fries and the small serving is enough for two people. Small hamburger with everything is so different elicious. I crave them.
