    CSD....Is that pastrami distributed on the West Coast?  Portland, OR market
    I have used RC Provisions Navel for several years, rave reviews but always wanting to see if the grass is greener somewhere else.

     The southern California area would be the closest. However,  www.kennyandzukes.com in Portland is known for their pastrami and pastrami cheese fries. I've never been there, but have read their reviews.

    C'mon! Vienna Beef New York pastrami, Miller rye, and a Chipico kosher dill pickle spear from Jake's in Milwaukee. Customers need only apply their own mustard at the table. You gotta problem with that?

    Table mustard is fine, as long as some of it wound up on that sandwich.  If none did...then yeah, we gotta problem.
     
    I wholly approve of the multiple pickle spears, though.  When it comes to trying to have just one they're worse than Lay's!

    CSD, Any distribution (retail) or restaurants using the Pastrami in the Fox Valley-GB area. Up here they think Boars Head Top Round Pastrami is the gold standard.

    Haen's in Kaukauna lists corned beef as a seasonal/specialty item...maybe you could get them to give pastrami a shot?

    Had the pleasure of Katz's in NYC recently; so far my favorite pastrami anywhere. You won't see mustard as it hasn't been applied yet

    That looks like a pretty thick cut; is that unusual?  Most of the online photos I've seen show thin or shaved slices.
     
    And thank you for not forgetting about the mustard.  As long as it wasn't some of that fruity s**t.

    The thicker cut is very usual for Katz's - it's all hand sliced so you will always get a bit of variation, but it is so tender that I think it would fall apart on a machine slicer. And definitely none of that fruit s**t; spicy deli brown mustard is the only way to go.

    Vienna Beef pastrami is available as a New York brisket (very lean) and New York Navel and Roumanian navel. The New York pastrami is heavy pepper and the Roumanian is light pepper.. Vienna Beef pastrami is fully cooked in a smoke house using hickory. To serve, they're heated in a steam table and hand carved or machine sliced.
    Vienna Beef also offers a brown Dusseldorf mustard. The pastrami is available at Jake's and Benji's Deli in Milwaukee, as well as the Vienna Beef factory store in Chicago, where it is sold by the pound or a complete navel.

    Hot pastrami sandwiches come in non-Jewish varieties, too!
     

     
    This is one that a coworker had from Franklin Giant Grinder a couple of years ago.   He held it just long enough for me to snap a pic, and was then gone in a flash, understandably.  I'll have to get my own if I'm going to capture a cross-sectional view.
