Lisa....knafi is made with shredded phyllo. The base is similar in texture to an oatmeal bar cookie.fairly dense and packed and held together with butter, honey, spices, orange blossom water and cream of wheat(sometimes add a bit of brown sugar if it seems too runny) For the cheese filling you can either use a slightly sweetened ricotta or else a sweetened marscapone. Over the top you make a layer of the shredded phyllo then drizzle the honey/butter/spice solution over it....if orangeblossom water is not availiable, a bit of lemon juice doesn't hurt. I usually sprinkle some chopped nuts over too, before baking. I actually prefer this pastry slightly over baklava.
