Home made Cookies!!

I stayed up till 2 last night making cookies.  Last week was really rough and I had decided not to bake this year. But my husband insisted that I bake something.  Well just the smell of the sugar mixed with the butter and vanilla made me smile.  Then watching my daughter take a bite of the first cookie of the holiday season made me feel better than I had for a week. I don't even have to eat the cookies to be happy.......but I did and they taste pretty darn good! I usually make 10 different types of cookies to give away.
So......share with me what cookies you like to make and what cookies you love to eat for the holidays.
If you do I'll share with you my favorite 5 ingredient cookie recipe.

    I make these for a Vegan friend.  They're amazing and I've probably posted the recipe here in the past.
     
    Tofu Peanut Butter Cookies

    One 18 oz jar of peanut butter
    one 16 oz pkg of firm tofu, drained
    2 cups sugar
    2 Tablespoons of vanilla


    Mix all ingredients until well blended. I use a blender or processor.  
    Place 1-2 teaspoon size balls of dough on a cookie sheet.  I use a small ice cream scoop
    Bake at 325 degrees for 20-25-mins.  I use an oven.
     
    They melt into a wonderful peanut butter cookie.
     
    You have to use sugar.  Made them once with Splenda and ended up with sawdust balls.

    Really?  Tofu peanut butter cookies?  You've been in CA too long.
    I'm going to make 4 kinds:
    Italian almond cookies topped with icing and nonpareils
    Caramel pecan bars
    Shortbread cookies
    Mexican wedding cakes
    I give most of them away to the neighbors.

    Once upon a time I had a recipe for a cookie that the dough was pretty simple (butter flour brown sugar - I think that was it). Wrapped around a Hershey's kiss and baked then cooled.  Long since lost the recipe, but a lil creativity and maybe a few sugar sprinkles would bring it back

    Lisa, please try the recipe if you like peanut butter cookies.  It's amazing!  REALLY!
     
    I also like Lidia's pignoli cookies which are easy and divine.

    I LOVE Cookies but I'm not a good baker.
    I bought a box of Cookie Dough - "Amanda Marie's Gourmet Cookie Dough" (Made in Canada) from a young guy as a fund raiser for his Pop Warner Football Team.
    White Chocolate Macadamia Nut -Portioned frozen dough you just slap on a cookie sheet and bake. Delicious!

    Easy 'no-bake' cookies.  I think these were called 'Charlie Brown cookies when I was in elementary school.
     

    Peanut Butter & Chocolate Oat Drop Cookies

     
    • 1/2 cup milk
    • 1 1/2 cup sugar
    • 3 Tbl. Cocoa
     
    Bring to a boil and cook for 1 full minute. Remove from heat and add:
     
    • 1/2 cup peanut butter
    • 1 t vanilla
    • 3 cups oats
     
    Stir and drop on wax paper. Cool for at least 30 minutes.

    Tofu cookies?!?!?  My daughter loves tofu and I have a friend who is vegan.  He loves my cookies but since I use butter I feel bad giving him something he only shares with his friends.  I can't wait to try these!!
    I also make Mexican wedding cookies. They are so easy and yummy. My husband loves my lemon icing cookies.  Kind of a shortbread with a really zingy lemon frosting.  I haven't made bar cookies in a couple years but carmel pecan bars sound good.
    I am not sure if/how to post a recipe.  My 5 ingredient cookie recipe was found on Allrecipes then I messed with the amount of the ingrediants and added chocolate.

    If you have your 5 ingredient recipe on your computer you can copy it and then paste it here in the reply box.
     
    Or you could do it the old fashion way and write it out.

    The peanut butter and oat drop cookie recipe sounds interesting.  Does the oatmeal stay hard or does it get softer when added to the hot cocoa mixture?
    I'm making chocolate chip cookies,m&m cookies, oatmeal raisin, peanut butter with kisses on top, lemon top knots, Mexican wedding cookies, spritz, toffee bars, haystacks, hmmm I can't remember the last one.

    My mom used to make the oatmeal chocolate drop cookies every holiday season. They were pretty darned good. But my favourite cookie though was her Russian Tea Cakes. Yumm! Might just have to pull out the recipe and make some this week.

    My mother made plum puddings the day after Thanksgiving for Christmas......they were wonderful.  She also made many kinds of cookies including pecan tassies, Mexican wedding cakes, crescent nut cookies, chocolate hazelnut cookies and always her wonderful nut rolls.

    Every holiday without fail, my husband makes corn flake mistletoe.  Very easy:
    4 cups corn flake cereal
    4 TBSP butter (real stick butter)
    32 large marshmallows
    1 TSP vanilla extract
    1 TSP green food coloring
    Cinnamon Imperials for decor.
     
    -Melt the butter over low heat.
    -Stir in marshmallows. Stir, stir, stir.
    -Cook till melted (like for rice krispies treats)
    -Add the vanilla extract and food coloring
    -Stir to mix well
    -Pour in the Corn Flakes and stir to coat.
    -Place in little mistletoe "balls" on parchment paper
    -Top with Cinnamon Imperials.
     
    You can be fancy and make wreaths out of them or whatever, but you need to work quickly as they set up rather fast. 
     
    On a sidenote.  I spent 1.5 hours driving to 5 stores in my town searching for Cinnamon Imperials...they were all sold out.  Wanted to cry.  Wanted to give up.  Found them at the hunting/farming/fishing store... NOT kidding.

    OK  ... i just finished this recipe.        The oats are a little drier than i like.    I did a search and found this recipe on foodnetwork and food.com.   Both of those used more sugar and 1/2 to 1 stick of butter (not in the above recipe).   Also, it appears the oats should be 'quick-cooking' rather than 'old fashion'.    ... I used old fashioned oats.
     
    Next time ... i will partially cook the oats in the milk. Then add sugar, butter, vanilla,  cocco heating until melted; then add the peanut butter.
     
    OH ... I forgot to add cocco to my batch so I sprinkled it on top of the cookie.   ... good! ...

    My all-time favorite holiday cookie is a rolled/cut-out sugar cookie with powdered sugar instead of granulated sugar in the dough. Also, it has extra vanilla & no almond extract. They have to have homemade buttercream frosting instead of Royal Icing. They're a crisper cookie, but that's how I like them. P.S. I feel equally strong about pecan pie... must use brown sugar/white sugar & no corn syrup.

    I have 2 recipes I really like, one is an oatmeal-raisin and walnut cookie supposedly from Scrafft's, and the other is a chocolate chip which I added chopped pecans to, which is different.  It uses half all purpose flour and half cake flour, and you shape it in a roll, refrigerate, and bake later so you can have hot cookies anytime, though I think the texture changes if it refrigerates more than 3-4 hours.  I like that you can clean up, then serve later.
