Homemade Croutons

Hi all,

The search feature on the forum isn't working (at least for me it isn't), and I was going to check to see if I could find any crouton recipes.

Basically all I am looking for is something simple, with your basic herbs and spices and garlic.

I have checked the net and found some stuff but nothing that specifically tells what herbs and spices to use.

Any help is always appreciated.

    Fried Croutons
    2 tablespoons extra-virgin olive oil
    2 slices bread, sometime I use a mixture white, French rye, etc
    1/4 (one quarter) inch dice to make 1 cup
    Fresh herbs or dried (your choice) finely sliced/chopped
    (In a pinch I've used the dry Italian Spice)
    1 clove garlic, peeled and left whole
    Salt and freshly ground white pepper

    Heat the oil in a small saute pan or skillet over medium heat. Add the garlic and let it sizzle for a bit, remove garlic. Add bread --
    add the herbs of your choice (sage/rosemary/thyme) salt and pepper. Sautee over medium flame until crisp and golden brown. I sprikle with a bit of grated parmesan while still warm.

    We do a very similar recipe, but toast the bread a bit in a toaster oven to dry it out, and we use a lot more garlic added with the bread. Just be sure to pick it out when you're done.

    Cube your bread and put it in a bowl. Mix fresh chopped garlic with melted butter or olive oil and pour over the bread. Add a handfull of parmesan and fresh chopped parsley. Mix all together. Toast in the oven until brown.

    Thanks all....sorry I couldn't get back to this post sooner....but life called.

    I like the pan fried version.....most of what I read on the net was oven baked....but I think I like the stove top method. Thanks again
