National Strawberry Shortcake Day

Sunday 6/14, is National Strawberry Shortcake Day!
It's also Flag Day!
What could be more American than Old Glory - The Grand Old Flag & Strawberry Shortcake! 
On this day, no "Store Bought" Shortcake.
Make it from scratch!
"The Original" Strawberry Shortcake Recipe
This strawberry shortcake recipe has been adapted from a strawberry dessert recipe known since the early 1900’s.
  
Ingredients:
* 2 cups flour
* 3/4 cup milk
* 1 tablespoon baking powder
* 1/2 teaspoon salt
* 3 tablespoons sugar
* 6 tablespoons butter
 * 1 quart fresh strawberries
* 1/3 cup sugar
* 1 1/2 cups whipping cream
 
Strawberries:
Prepare strawberries an hour or two before serving. Rinse the strawberries under cold water; drain well. Slice the strawberries in halves; place in a bowl. Sprinkle with the sugar; cover and let stand at room temperature for about 1 hour.
Tip: Leave 8-12 strawberries whole for decorating.
Diet Tip: Use fresh dark red strawberries without adding sugar.
Whip the cream until it holds a soft peak. Cover and refrigerate until ready to serve.
Shortcake:
 Preheat the oven to 425 degrees Fahrenheit. Set rack at center level.
 Use a large bowl to combine flour, sugar, baking powder and salt. Mix thoroughly.
Cut butter into small pieces and work in with fingertips.
Make a well in the center. Stir in milk. Mix just until dough is moist. Let dough stand for a minute.
Turn into a buttered and floured round cake pan and pat into shape. Brush on a little milk or cream and sprinkle tops with some sugar, if desired.
Bake for 10 to 15 minutes, until risen and golden brown. Test with a toothpick inserted in the center. If it comes out with dough clinging to it, lower the heat to 350° and bake about 5 more minutes.
Remove from the pan and split horizontally with a serrated knife. Butter the hot biscuits then top with the strawberries.
Serve with whipped cream for topping.
 Serves 8.

    Flag Day is special.  Strawberry shortcake can be eaten all summer.  My father, a veteran of WWII, proudly flew his flag every day until he died.  We now carry on my Father's tradition.  Every time I look at our beautiful flag I thank God that I'm an American.

    I fly my flag everyday too.
    Friday, at work, I gave the 32 people on my team small flags to fly in their cubes along with my message about the importance of what it stands for. It was a pretty sight!
    Members of the 5 other teams in the building thought it was a good idea. Maybe next year there will be 200+ flags!

    Growing up I never ate strawberry shortcake, my mother's version of it was to bake a pound cake and serve the strawberries and whipped cream over slices.  My family loved it, especially my dad, and it's the way I make it using Pat Conroy's MIL recipe from his cookbook.  He serves fresh, sliced peaches on it.  
     
    One of the best strawberry shortcakes I've eaten out, was from Brigtsen's restaurant here and I'm hoping he'll put out a cookbook with his shortcake recipe.  His website - http://www.brigtsens.com has a couple of recipes (his pecan pie is excellent) but no shortcake -

    Best Strawberry Shortcake was made by my late mom every year for my birthday in late May. She said when I was an infant, she made my birthday cake a strawberry shortcake, because strawberries were in season...and it became a yearly tradition that continues 70 years later....oh yes I love strawberry shortcake!!!

    haven't eaten any in years, though sometimes when we visited my great aunts in Hot Springs they would make one. Poteet ,Tx around San Antonio has a strawberry festival every year and they sell all things strawberry.
