Need a great recipe for Pheasant

My granddaughter's boy friend brought us some boned peasants that he and his dad shot in South Dakota.  We are having them for dinner and I don't know what to do with them.  I have not had peasant since I was a child and have never cooked one.  Does anyone have a recipe which they have tried and like?
 
I hate  to ruin it by overcooking.

    Yes.  They are pheasant breasts abd they look wonderful.

    I would take the pheasant breasts, flour and brown them in butter.  Remove from pan.  Add a little more butter and add the peeled slices of 2 Granny Smith apples.  Brown these a little.  Return pheasant to the pan, add some Calvados then heavy cream.  Simmer on low until the pheasant is cooked.  Won't take long, maybe 20 mins.  Serve with some crispy potatoes!

    You're right, I have been snarky lately but those poor South Dakotan boned peasants (that's what you typed) seemed kind of........well........ODD!

    Not to be snarky or anything else, but when I read "some boned peasants"  and "I have not had peasant since I was a child" it just strikes me as kind of wrong.  Don't you think?

    Salt , Pepper , Panko , Skillet.
    Not fancy , but good. You may want something fancier , not me.  I dont like to change the taste. 
    Put it on a bed of pasta.

    I love pheasant poppers. pieces of pheasant with jalapeno, cream cheese wrapped with bacon and seasoned with cajun seasoning. fried pheasant is really good as is grilled pheasant, rubbed with butter and lots of salt and pepper and grilled. However you cook them you will have a great meal.

    Greymo, I hope they turned out great. 


    Thank you.  They turned out wonderful.  I followed Uncle Groucho's advice and made it simple.  I  sliced them and lightly coated them with salt, pepper and flour.  I quickly sautéed them in butter-olive oil mixture.  They were delicious and went well with my potatoes gratin and composed ratatouille.
