New Hot Dog Relish for the 4th.

8 Dried Ancho Chili Peppers Seeded and Cut into 1/4 inch pieces. Use Scissors.
1 Medium Onion Diced 1/4 inch
1 Medium Fresh Jalapeno Diced 1/8 inch (Leave Seeds If You Want)
2 Garlic Cloves Minced 
1/2 Cup Rice Vinegar
1/2 Cup White Vinegar 
1/2 Cup Vegetable Oil
4 Teaspoons Dark Brown Sugar
1 1/2 Teaspoons Kosher Salt
 
Combine all ingredients in a large Mason Jar. Shake until well blended. Refrigerate for at least 8 hours. Shake every couple hours.
 
This is a fantastic Relish. Top with Brown or Yellow Mustard. Works great on Burgers and added to Tartar Sauce. Put it on a Bagel with Cream Cheese or mix it with Cream Cheese for a spread or Cheese Ball.

I used fresh as it was available. I like the taste of fresh for this but I have not tried other versions. But I am sure you could used pickled or even dried. The heat level would be different on each. I do not think I would use canned adobo style as the taste might over run the dried Ancho. ...Russ

Back to the relish.
 
Do you toast the anchos or hydrate them?
 
Here's a similar relish recipe I've make from Pati Jinich.  I put it on everything!  It's a bit oily so I drain the solids to use them and cook with the oil.
 
 
 
Ancho Chile Salsa Pickle
 
Makes 2 cups  (I doubled for 2 jars)
 
 
6 - 8 Ancho chiles, rinsed, stemmed and seeded, about 3 ounces.  (I did not rinse)
 
1/2 cup finely chopped white onion
 
1 clove garlic finely chopped
 
1/4 cup UNseasoned rice vinegar
 
1/4 cup white vinegar
 
1/2 cup vegetable oil
 
1 1/2 teaspoons kosher salt
 
2 teaspoons brown sugar or grated piloncillo.  I used the piloncillo
 
 
Using a kitchen scissors or sharp knife, cut the stemmed and seeded chiles lengthwise into thin strips and place them in a mixing bowl.
 
Add the onion, garlic, vinegars, oil, salt and sugar to the bowl and toss to mix well.
 
Transfer everything to a container with a tight fitting lid and refrigerate for at least 8 hours before using.
 
I tried it after about 4 hours and it was strong.  I tasted it the next night and kept going back for more tastes.  DELICIOUS!

That looks like about the same recipe. And the color of yours is just like mine. I blister the peppers in a cast iron skillet. I made tartar sauce with it a while back and figured it would be great on Hot Dogs so i made a batch a couple days ago. The consistency changes each day for about three days. Its great like I said with cream cheese. I bet it would be good on Steak like a chimichurri or on potato skins.  I did not hydrate the peppers....Russ

I'd be inclined to char the onion and jalapeno (I'll bet a poblano or serrano would work equally well) in some coals in the grill first, and add the brown sugar to taste at the very end.

I read an article about what would happen to society if automation eliminates the need to work. There were several good humanitarian things that may result, but the consensus was that people would end up using drugs and bickering on the internet.

Brad, the raw onions remain crispy, at least in mine and it's a great texture.
 
I've also been thinking about the raw jalapeno.  We're not supposed to flavor oils with raw herbs...  but what about chilies?
 
So good without the jalapeno I might not add it.  But, I bet it adds a bit of heat to the mixture.
 
I made 2 jars the last time and my sister-in-law took one.  She was eating it out of the bowl with a fork!

A Ancho Chile is actually a dried Poblano. A dried serrano would add a lot of heat. But serranos have a very good flavor as well. ...Russ
