I know it's not a deli- but I would be completely shocked if there were ever a Kosher Deli in Wilmington.
Growing up on long Island when  was a little kid, we had 3  just in my hometown alone. Nowadays, I don't think there are more than 4 or 5 (at the very most) in all of Long Island....

No doubt Long Island has lost many kosher & kosher style delis, but it is not quite as dire as you imply.
Omitting Brooklyn & Queens, these are the ones that remain, many I've been to (in bold).
Ben's Best, 3 locations, Greenvale, Carle Place, Woodbury
    Lido Deli, Lido Beach
    Woodro Kosher, Hewlett
    Max's Appetizing, Hewlett
    Kensington Kosher, Great Neck
    Regal Kosher, Plainview
    Pastrami & Friends, Commack
    Pastrami King, Merrick
    Zan's Kosher, Lake Grove

    Recently lost..
King David in Lake Success, now a Shake Shack
Andel's in Roslyn Heights, was the best source for smoked fish east of the lower east side.
..and one in Plainview I can't remember the name of
..and another in Merrick on Merrick Rd now an Allstate office.

Here in Fredericksburg, the 2 closest options I have are in Fairfax and Richmond. Neither one is as good and the worst on the list above.

Boomy's was the one in Plainview

My point is Long Island is 100 miles from The Nassau County Border to Montauk- and has a population of I think 10 million?- and there are less than 10 Jewish Delis
    -
There's far more restaurants in the Twin Cities within a radius of only 20 miles and a  population of 2.5 that serve hotdish and Swedish meatballs that some say "don't exist"

Shapiro’s on 2nd and Jack Lundy’s on Miller Rd. They are closed but folks I know from that era had said they were Kosher delis.
