Nick Anthe's bean salad Recipe from a great Cleveland Restaurant that Closed in 2011

I used to go to this place when I traveled to my office in Cleveland. I missed the bean salad they served. I don't even like kidney beans but this salad changed my mind. I wanted to make it for Super Bowl tonight and a quick search showed that the original owners made it available upon closing. I wish other great places would share recipes when they close. When you sat down this salad was served as a free appetizer. Simple but excellent. ...Russ

In 1991, the late Nick Anthe and his successor Doug Robinson sat down with the Beacon Journal for a magazine story about the restaurant.
They shared their recipe for the creamy red bean salad that was served at every table.
In light of the restaurant's closing this week, it seems like a good time to rerun the recipe, since the real deal is gone now.
NICK ANTHE'S BEAN SALAD
5 cups cooked red kidney beans
3/4 cup diced celery
3/4 cup diced Spanish onions
1 cup diced sweet pickles
1/2 tsp. salt
1 tsp. white pepper
1/2 cup mayonnaise (or to taste)
2 tbsp. sweet pickle juice
Rinse red beans thoroughly and drain very well. Mix with all other
ingredients. Chill.  Makes 10 servings.

    As much as I love mayo I'm not sure about it on beans.  I'll have to try it.  As a kid we always had a green salad with dinner but sometimes my Mother would make kidney bean salad.  It was 1 can of beans, rinsed, S&P, red onion, oil and wine vinegar.

    That sounds good but first I want to make the Kidney Bean Rarebit.
     
    We also always had a green salad, dressing changing with Mom's new find.  We also always had a baked potato.
     
    Another bean (are they beans?) salad that my mom served was rinsed canned garbanzo beans with just salt and pepper.

    My mother's kidney bean salad was much like this one sans onions. I always  liked it. I'd make it with the onions, myself.
