Picking Some Brains

I often see food trucks at carnivals and concerts. Many of them have out of state license plates. To all you food truck guys and gals, how do you get "in the know" of these events, in order for you to set up shop at these events?
I plan to retire soon and would like to travel the country with my food truck working events across the U.S. Any tips?

You might get a better response if you post this in Restaurant Professionals Forum.

From the title, I thought this was about sandwiches in St Louis. Nevermind.

While sitting at my auto dealer's service waiting room today, I saw a story about food trucks being the "newest" trend at weddings, but the magazine was several years old. Several thousand trucks are represented  on a self help website, so it is easy to find the 6 or 7 you need anywhere in the country. The web site address had been ripped out, but I'm sure that you can find it. The article said that most food truck owners are willing to travel some distance, if paid mileage.

Wouldn't you need local Board of Health approval?

    Yes and no

In IN the local hd comes by the day the festival opens does a quick peek, if all seems ok then they issue the festival permit.  Most "carny" operators have been certified at their home location.
