I already knew that pizza baked in a brick oven is both 'different' and 'better' than essentially the same product from a Blodgett.  Yet, many legendary NYC pizzerias still use them.

e.g., the most renowned of them all, DiFara's:

My very first taste of a brick oven pizza was at the Manassas, VA store of Bertucci's Brick Oven Pizza back in the mid-'80's  WOW!  That changed my whole perspective on pizza.  Prior, the toppings were the 'star', now it was the crust.

Now, brick ovens are all over the place - even in Dallas!  And the world is a better place!
