    Interesting. I'm reminded of all the Vietnamese places along the coast in MS and around NOLA that have come about over the years after the Vietnamese immigration to the area. I remember hearing Emeril Lagasse raving about a place near NOLA that makes his favourite pho. Mixing the two regions foods makes sense, it would be a good fusion.

    IN the LA/OC area in California, there are tons of places like the Kickin' Crab, the Boiling Crab etc. that combine the two. Often times at Kicken' Crab we'll get a Crawfish Boil with andouille sausage, a nice treat after an appetizer of Vietnamese Garlic Noodle, Coconut Sea Snails and Cajun Edamame. The two cuisines really go together!
