RE: Recipe for frankfurter/wiener/sausage
The best source that I know for sausage making, sausage recipes is a book by Bruce Aidells. He only has one recipe for hot dogs, Chicago Style Hot Dogs. Bruce describes his trials and tribulations with this recipe. Temperature and cut of grind are important because you must create an "emulsion" in order for the recipe to work. Remember, hot dogs are cooked before they are put into the casing.
