Recently my mom came to visit me for 2 weeks and she was shocked at how many leftovers we throw out. I'm not talking about enough food to feed a small army here but a spoonful of leftover corn or maybe half a serving of spaghetti. She said that we were throwing away the perfect ingredients of the soup she made at least once a month when we were kids and it just surprised me that I had completely forgotten this. Every night when we cleaned the kitchen she would take whatever leftovers we had and put them in this gallon container in the freezer. Broth from cooking fresh vegetables went in there, leftover chili, spaghetti and meatloaf went in there. The only thing that didn't go in there was salads. She said at the end of the month she would just look at it and if it wasn't tomatoey enough she'd add a can of stewed tomatoes, if we hadn't had enough leftover macaroni and cheese she'd add macaroni to it. Basically what she made was a really delicious soup completely free with stuff that commonly makes it to the trash. My mom is in some ways a really bad cook but the soup was always so good. Anyone else ever do this with leftovers?
