I don't have a roaster but one way I like to do ribs in the oven is
ribs with sauerkraut, garlic, apple, caraway seed. I start by cooking the kraut in a pot for about 30 minutes at a simmer. This takes some of the bite out of the kraut. Then drain the kraut. Take 2 large sheets of heavy-duty foil arranged in a cross pattern. Put the kraut on the foil, add one chopped peeled apple, a bunch of garlic cloves and a pinch of caraway seed. Prepare the ribs by removing the membrane and trimming excess fat. Salt and pepper the ribs and put on top of the kraut. Fold up the foil in a tight package and bake at 325 for until the ribs almost come off the bone.
These always disappear around our house.
