Is this a "Hurry up" trip or will you have some time with possible side trips?
Suggest you use the "Find Regional Eats" feature in the upper right corner of the homepage and type in the major cities along I-40 - Flagstaff, AZ - Albuquerque, NM, - Amarillo, TX - OK City, OK - Little Rock, AR - Memphis, TN, Nashville, TN.
Each time you open it, it will pull up places in or near those towns that have been reviewed and vetted on Roadfood.

Plenty of great places.  I'll list a few that I particularly liked.  ....
    Joe & Aggie's Café.   - Holbrook, AZ.
Casa Chimaya.  - Santa Fe, NM
    Jobe's Drive-In.  - El Reno, OK
Cattlemen's Steakhouse.  -  Oklahoma City, OK
    Rock Café.  - Stroud, OK
Charlie Vergo's Rendezvous - Memphis (A lot of recent reports say it has gone downhioll, but I though it was just as good as when I went 20 years ago.)
    Loveless Café - Nashville, TN

Don't miss the opportunity to eat the world's best green chile cheeseburger at the Santa Fe Bite (formerly Bobcat Bite) in Santa Fe, New Mexico.

I'll tell you where to stop but not eat Russell's Truck Stop on 40/66 in Endee, NM. Car museum is great------spend a few minutes there walking around. DO NOT EAT AT THE ROUTE 66 DINER. Horrendous, obnoxious service with mediocre food.

One gets the impression you didn't really care for the Route 66 Diner. Todd, Buz and Linc seemed to think it was OK.

Janet and I enjoyed the Route 66 Diner in Albuquerque.  It wasn't outstanding, but not a bad place.   We had decent service, as well.

Made it to Joe & Aggie's recently and we were all disappointed.  Mrs. Lewis, the proprietor of the Wigwam Motel down the street, warned us but we didn't listen.  It was a kitschy place and the host and server were very friendly.  But the food was just mediocre.  We ordered chili rellenos, chicken enchiladas, and a chicken burro.  I would not recommend this one.
