Shillito's White Chocolate Cake
We've had this recipe for a while but had not made it till this holiday.
For those not familier, Shillito's was a a snazzy department store chain in Cincinnati Ohio. This a cake they were locally famous for. We have not cut into it yet but from some very sly bowl tasting on my part I'm convinced I won't want to share
1/4 pound white chocolate (Don't cheap out already with bark. Get the good stuff with that good cocoa butter) (Good chips would be fine)
1/2 cup boiling water
2 cups sugar
2 sticks BUTTER, cut up, room temp.
4 egg yolks, room temp.
1 1/2 baking powder
1 teaspoon (real) vanilla
1 cup buttermilk
4 egg whites beaten stiff
1 cup pecans chopped fine
1 can angel food coconut (unsweetend coconut cream)
2 1/2 cups cake flour
Preheat to 350
Melt chocolate in boiling water. Stand and let cool.
Cream butter and sugar until fluffy and add egg yolks (one at a time) and beat well.
Add melted chocolate and vanilla.
Sift flour and baking powder together then add alternatly buttermilk/chocolate mixture
Fold in egg whites, coconut, and nuts. Don't Beat It Up!!! It did nothing to you to deserve that!
Divide into three nine inch sprayed pans. Bake for 25-30 minutes
1 /12 cups sugar
1/2 cup water
1/4 teaspoon cream of tarter
1 teaspoon vanilla
2 egg whites beaten stiff
11 ( I don't know why but 11 it is! ) Marshmallows
Boil sugar, water and cream of tarter until it forms a small ball when dropped into cold water
Take off heat and stir in marshmallows until melted.
Pour over egg whites and Whip until thick.
Spread on cooled cake of course.
I'm not a great baker or recipe follower but this is one I had to try!
Once or so a year when I was a wee one Mama would take me downtown to a movie at the old Albee Theatre (Matt Helm, In like Flint, James Bond could explain my fascination with scantilly clad vixens and sports cars). Then she'd buy my allotment of dress clothes and treat me to lunch at McAlpins or Shillito's. No wonder I love my girl!
