Spinach Pizza for Good Friday

On a web site I belong to about Italians and Italian food, we're talking about a traditional Good Friday tradition in my large Italian extended family: Spinach pizza. It is a stuffed pizza. Spinach cooked in olive oil and garlic and placed between two layers of pizza dough and sealed and baked . Traditional for Good Friday. A peace of heaven. Any one ever had anything like this?? Highly recommended.

    I've had pizza spinachi many times at a few places. It's normally just a regular pie, though, not a calzone-like pie. Spinach, garlic and a bit of red sauce (I've even had it with white sauce, which was good). Bucca di Beppo used to have it as a regular menu item years ago and it was a very good pie! Sadly, they removed it due to the spinach listeria scare years ago and it never returned. Spinach on pizza (with garlic) is just a good combo.

    Yes,some of my relatives would add Mozzarela to the spinach, or a little rigotta. That works,too. As a stuffed pie it's something delicious. Over on the Italian Facebook group, I'm learning it's an easter tradition for many other Italians. It was our traditional good friday(meatless) meal. Guess it was a tradition in lots of Italian homes.

    Looked something like above. My mom made it in rectangular pans like above

    Spinach Pizza is a regular menu item at any Chicago Pizza joint serving Stuffed Pizza.  A typical combination would feature Spinach, Garlic, Mushrooms, and Sliced Fresh Tomatoes.  Doesn't look anything like the photo above.

    The Good Friday spinach pizza didn't have sauce(gravy) on it. It was a stuffed pizza just with spinach in the center.

    Slightly off topic, but my buds back in KC were waxing rhapsodically about the Lenten fish fries at the many Catholic Churches, so I thought I'd ask out here, and not only were there none, one guy asked me what fish a Lenten was. I thought he was pulling my chain,
    but alas, he came back on and said his teen explained what Lent was!
    So not many Catholics or Irish or Italians in Southern Oregon. :)
