Sport stadium concession margin

Hi all
Not sure if this has been covered before.
What food cost or pricing would you apply to a product sold at sporting events if the host team takes 40% - 50% of gross sales? Could you show me your calculations? This is why food and beverages cost is so high at events.

    Make sure you understand all the costs in doing gig like this, especially for the first time.
     
    Is the team take the only additional overhead, or are you having to pay a cut or rent for the location also.  Are you restricted on what you can sell, such as no drinks.
     
    If the sport type has set breaks do you have enough staff to cover quick turn of items in a short amount of time, half time or 7th inning stretch?
     
    If your just paying 40-50% at a limited access event and you have a food item that is popular thats not a bad deal.
     
    Just calculate your sell based on a 50% markup above your normal sell, you can then insure you are making what you would normally make.
     
    We do international concerts where we pay a space rental, a percentage to the organizer, and tea money to get the space from the venue owner and are restricted on types of drinks, if any we can serve as these are normally sold under another deal by the organizer to the big names for booze or soft drinks.
     
    Do your homework, the promoters will promise the world, hundreds of thousands of attendees, etc.   Figure your take on a small percentage of attendance at first, never buy a lot of perishables you can’t use the in the future.
