Tamale Pie

Here is something my mom used to make that I love but rarely make anymore. Picky Peggy doesn't like it Quantities are not given, just done by feel. Sorry people... Adjust as you will, very forgiving recipe

About 2lbs hamburger
1 lg onion chopped
1 can corn, NOT creamed corn
1 or 2 cans stewed tomatoes, depends on how much you like...
1 can chopped chilies, if you like.
1 or 2 cans chopped balck olives, see stewed tomatoes
1 small can enchilada sauce
hot sauce, if desired, to taste.
1 - 2 cups shredded cheese, I prefer a mild cheddar.
cornbread batter

Brown meat, onion & garlic in a skillet till done.

Drain corn, chilies & olives, toss liquid.

Chop stewed tomatoes into large chunks, don't drain these or if you do reserve liquid.

Combine all of the above, I include the tomato juice, don't forget to add the enchilada sauce, and mix together. Put into 13x9 pan that has been lightly oiled, sprinkle(cover) generously with cheese.

For the cornbread batter I use 3 boxes of Jiffy corn muffin mix. You can use any cornbread mix or handmade, whatever.

Spread the batter over the meat mixture and bake. About 30 mins at 350, or whatever you usually do cornbread for, just test it for doneness.

This is a great meal just by itself, matter of fact I'm making it tonight. Picky Peggy will get tacos.

    Thanks Mike! Sounds like a great recipe my family would love. I love the inclusion of enchilada sauce.

    I am going to give it a try sometime this week.

    This does sound good. I used to have a Tamale Pie recipe that I loved, but it disappeared and I've never found another that I liked as well. I'll try yours soon.
