the rolls are made via pouring liquid ice cream and any mixed-in toppings, which include oreos and chocolate sauce, over an ice-cold steel plate, which is usually frozen to approximately -25c.
the bloodless plates immediately freeze the liquid base, basically cold 'frying' it.
The ice cream makers then use metal paddles to combine and chop up the base earlier than spreading it into a skinny layer at the plate.
In the end, they use the paddles to roll the ice cream into round spirals, which they area around the inside of a cup before adding extra toppings, including whipped cream, oreos and cakes.
