    Can only speak for the small locals I know from years of experience, suggest you try looking for the small locals that are still around rather than the foo foo and most likely overpriced types found the above article, here are two that I know can be recommended:

    Salt and Time is the real deal. Their butcher just defeated all comers at the US's biggest meat cutter shootout. Bryan Butler is the best butcher in the US.

    I don't doubt that Mr. Butler is an exceptional butcher, but I am curious about the criteria used to name him the best in the USA. Do you know what makes him the best?
