Around here, gas station chicken places are usually a franchise or one of those automated pressure fryer systems from the likes of Chester Fried or Louisiana Krispy Krunchy. The latter can be damn good but both types of places seem to have decreasing numbers of outlets. Independent fried chicken shops, and there are many, including a couple of up-scalish type places, tend to be operated by Black or Oriental owners and many operate out of what appear to be former Church's locations. They can have huge menus of 'chicken, rice and seafood.'
