The story of white sauce, Virginia's unique contribution to Mexican American cuisine

Now this one is a complete surprise for me. A unique, regional "Mexican-American" appetiser sauce. I've eaten Mexican food in NOVA, but I guess the white sauce never made it that far north when I lived there. After reading this I kind of want to find a couple of good recipes and give it a try.

I'm leery of anything that includes Miracle Whip as a secret ingredient. There was a great Mexican restaurant in Birmingham back when Moses was young called Texican Taco Company that gave out white sauce with the standard
chips and salsa. It was great but the owner was a party animal and slowly drove his concern into the ground.

One Mexican place back in the 70’s.
Cuisines really were regional back in the day. Wonder how it is on tacos?

We have a newer Mexican Restaurant here that serves it...mates well with the HOT Salsa.

None of the mexican restaurants by me serve it. Now at Taco Cabana and Mama Margei's local chains, they have a guacamole sauce. I guess they pree avacados and mayonaise to make it? I know at the grocery store here  Herdez Foods from mexico  makes it .I can buy the jars of it here at H.E.B. or Walmart. If any restaurants around  here like El Jalisco serve a green sauce, it's tomatillo sauce.  They look like green little tomatoes.
