Took A Tamale Making Class

Out here in AZ, Christmas Time is Tamale Making time. Tamales at Christmas are a big tradition in the Mexican culture and there are Tamale Festivals, Groups and Churches sell tamales as fund raisers etc. just like they do Pirogues in Pittsburgh.
I've been bitten by the Tamale Bug! 
Yesterday, my son & I took a Tamale Cooking class at a local Mexican restaurant- El Palacio.   http://www.epfamilyrestaurants.com/chandler.html
During the class, I learned something new! There's such a thing as Dessert Tamales. Never heard of such a thing!
Anthony Serrano, the owner/award winning Chef, demoed making Strawberry Cheesecake Tamales! Blew me away!
Now I'm on a Tamale making kick!
Please post you Tamale recipes ESPECIALLY your dessert tamale recipes.
Sure, I can find recipes on the Internet but if you have a  good one, please post it.

Can't help ya.  Only ate them once in my life and never made them.  Not a specialty of Pittsburgh, Boston or Anchorage.  Sorry.

Look at Tucson Tamale Co.'s menu for ideas. They have very creative tamale choices including a turkey, dressing & cranberry one that Bobbi loves.

Cream cheese, dulce de leche and fresh bananas.
 
Just a bit of all of them in the tamale then roll
 
Same with cream cheese and membrillo
 
You can do all kinds of combinations.  Think of sweets that go together then think of combinations that don't... but work. 
 
Apple and brie!
 
Do you know that you put sugar in the masa for a sweet tamal and leave out the salt?

Here's the recipe we got at The Cooking School:
HOLIDAY STRAWBERRY & WHITE CHOCOLATE DESSERT TAMALES
INGREDIENTS
1/2 # fresh pre-made masa
1 cup melted white chocolate
1 container of strawberry cream cheese
1 cup frozen diced strawberries
1 tbsp. super fine sugar
1tbsp, vanilla extract
1/3 cup agave nectar
1/4 cup finely chopped nuts (your choice)
1/4 cup strawberry syrup
corn husks soaked in water to soften
DIRECTIONS
  • Mix sugar, chocolate, nuts and syrup into masa until thoroughly incorporated
  • In a separate bowl, mix agave, cream cheese and strawberries together with a mixer.
  • dry corn husks on paper towels and spread a thin layer of masa
  • spoon strawberry mixture on top of masa but not completely to the edges
  • wrap the husks around the masa folding in the bottoms first then the sides
  • wrap he folded tamales in a sheet of aluminum foil
  • place in the freezer for a few hours to hold shape
  • put in a streamer for 45 minutes, remove, let cool and then enjoy
  • I could see serving them with ice cream or strawberry sauce or both with a sprig of mint for a Holiday Dessert

Ever had Salvadorian tamales? I prefer these over Mexican. The masa is loose and smoother, and is wrapped in a banana leaf. The end product was a very moist tamale.
I had several Salvadorians working for me years back, I would let them use the prep kitchen on an off day, they would make hundreds. I always got my fair share.
My favorite had potato, garbanzo, olive and chicken.

Making your own masa is so easy.  Just whip the lard or shortening until it's very light and airy.  You can also use butter.  That's the trick as it makes the masa light.
 
If you want to use prepared masa that's fine, too.  Ask for it at your favorite Mexican restaurant.  If they're nice they'll sell you some.
 
Of course this time of year you can find it at a lot of the mercados.  I forget!

My best way for Tamales. Call my tamale maker on Thursday. They are delivered hot to my home at 5PM the next day.

Delivered!  I have to go to Tamara's Tamales to get mine. 
 
A counter, two kids in the back with a bunch f steamers and stainless tables talking to each other while ignoring me.
