RE: Twice Baked Potatoes Recipe
Think of a twice baked potato as a gilded version of your favorite mashed potato. After baking 4 potatoes at 400°, I like to mash the potato with a couple of tablespoons of butter, 1/2 cup cream or milk (not cold), 3/4 cup Fontina or Gruyère, 1/4 cup Parmesan, salt, pepper, cream, and chopped chives. Put them back in skins and sprinkle with more of the two cheeses. Bake for another 10-15 minutes.
