As long as the cheese isn't sprayed or poured on!   Any hard yellow hoop  cheese or sharp cheddar will work for me.    ...

Add some Creamette noodles and some Campbell's Cream of Mushroom soup and you've got a great casserole...

That would either send me to the hospital or outright kill me. I'm allergic to mushrooms. But the Creamette noodles would put me over the edge just because of the awful memories.

I thought the best cheese I ever used for grilled cheese was "Mossholder Cheese".  This cheese unfortunately is no longer made as urbanization caused the farm where it was made to be sold.  It was a raw milk cheese described as a hybrid swiss, brick, muenster style. Mossholder Farm was on the edge of Appleton, WI and by the late 1990's the city was building around the farm.  Oh well now just a fond memory....

Every now and then, when we make it ourselves, some pimiento cheese is pretty good.

I always thought it was just my plebian tastes or, perhaps, nostalgia that leads me to prefer mild American cheese for 'grilled cheese'.  Turns out that E.I. DuPont de Nemours & Co. is right; there is "better living through CHEMISTRY"!
 
Indeed, now I know why all my 'experiments' in trying to make a "gourmet" grilled sandwich out of some expensive, aged cheese most always result in a mealy, nasty mess. 
 
There had to be a reason why God Created American cheese and now I know it!

De nada. I often fall back on Kraft singles for a grilled cheese, after all the first ingredient on their list is cheddar cheese. Old cheeses just don't work, they've had all the meltiness aged out of them. Muenster is always a good choice, though. Nice and salty and it melts just fine. Glad the people at the ACS, nerds that they are, decided to make the necessary research for us.
