What Do You Put in Scrambled Eggs?

Just made for lunch something I haven't had in a long time: Scrambled eggs and spinach. My mom made it when I was a kid. My dad loved it. Hell, I remember joking that my Sicilian side of my family would mix about anything into scrambled eggs: potatoes,peppers of all kinds,sausage,pepperoni,meatballs,spinach,asparagus, etc.,etc., etc. Most make a great sandwich,cheap and delicious. Of course peppers and potatoes with egg sandwiches  can be found in most Italian sandwich shops.
     If you've never tried scrambled eggs with spinach,give it a try. In a sandwich,melt a little mozzarella on top, perhaps.Any other scrambled eggs mix in you do or have tried??

    I put in slices of cooked breakfast links and torn up slices of American cheese.. yummmmm

    Salami, eggs and onions. Some like a little ketchup or mustard on top, but I prefer mine straight up.

    My wife would give them a spin in the blender w/ cream cheese....then cook. It aerates and the CC is smooth. VERY fluffy and tasty. She made the mistake of starting our daughter out on these when she was a toddler...it ruined her, she will eat no one else's scrambled eggs to this day...she is 24.

    Plain scrambled eggs and I can't eat.
     
    Cook them with a little milk or cream, fried onions, fried salami, ham or peppers and I clean the plate if cooked dry.  Never add cheese as it makes them slimey. Ick!
     
    I eat them with an Indonesian hot chile sauce that looks like catsup.
     
    I need to buy eggs!

    No milk or cream in scrambled eggs.I learned that from a chef-just a bit of water..and I add very sharp cheddar before I cook them. To each his own.

    When I worked in restaurants scrambled eggs got, as previously mentioned, a splash of water. When I make them at home, however they get a splash of milk or, on rare occasions, cream and S&P. My own eggs also get seasoned with salt and pepper, tabasco, milk and cheese. Plain scrambled eggs do little for me and they're something I never order when I'm out. Fried are my usual go to, even at home. Plain eggs are mostly reserved for omelets.

    Milk or cream in scrambled eggs and water in an omelet. But with plain scrambled eggs I like to add some cheddar. Of course I love adding fried peppers and onions, and some Italian sausage if I happen to have some. I also like scrambled eggs with lox and onions and scrambled eggs with salami, and scrambled eggs with pastrami. Oh, and I sometimes make them with andouille sausage. And yes leethebard, spinach, too. I almost forgot -- with broccoli rabe.

    I have scrambled them with spinach many times and added onions a few of those times. We ate Eggs scrambled with poke sallet (pokeweed) when I was growing up.  I loved it.  I scramble eggs with lots of ingredients now depending on what I'm in the mood for or have on hand.  If scrambling plain eggs I will add milk or cream and have tried the blender trick with cream cheese which is really good. I add water if making an omelet also. None of it is wrong if it works and tastes good.

    To me, scrambled eggs with just a bit of garlic and spinach is near perfection.

    plain scrambled with salt, and a little cheese
    spinach, sauteed mushrooms, and Swiss
    chopped Hatch green chiles and Monterey Jack

    I like mine with thumbnail size chunks of cream cheese mixed in but not blended. The eggs taste great when you get a bite of the cream cheese! When camping, on the last day, we cook and mix in any leftover bacon, potatoes, cheese, etc with the eggs.

    Almost anything....but some favorites include
     
    peppers and onions, with pepper cheese or cheddar cheese, sometimes with cubed ham
    scrambled Tex Mex, I think it's called migas...my wife's favorite!
    diced up leftover baked potato; brown it first before the eggs.
    lox and sweet onions just ocassionally, as lox is so darn pricey.
    diced up leftover meatloaf; don't knock it till you've tried it.
    I have used leftover smoked pulled pork (with no BBQ sauce); also pretty good.
    Spam diced up and browned first, same with kielbasa.
     
    My wife loves spinach, I am going to have to try that....
